The Vegetarian Student

Hi.
I'm a 21 year old undergraduate student, and I love cooking. I am posting here some of the meals I cook with recipes. All recipes will be ovo-lacto vegetarian friendly.

Pumpkin Patch Cupcakes
Took the recipe for vanilla cupcakes with buttercream frosting from the website that is linked through the picture. 
I added green food colouring to the icing, and bought the candies from bulk barn.

Root Vegetable Stew

Makes 2 or 3 servings 
Ingredients:
1 small rutabaga
1 small onion
3 carrots 
2 large potatoes
1 cup of vegetable broth
1 cup of water
Paprika, pepper, salt, bay leaf 

Chop all the veggies and then just put everything except the potatoes in the oven for at least an hour at 375 degrees. If you find is drying up just put more water or broth.  Then put the potatoes in and cook for another hour or until everything is tender.

First off, I LOVE tacos. I used to have them once a week, but not so much anymore. Had them for dinner tonight and remembered how much I love them! Mmmmm

Makes 6 tacos, hard or soft (7inch ish) 

Ingredients:

1/2 pack of Yves Veggie Ground Roung
1/4 cup of chopped onion
3/4 cup of chopped peppers
1/3 cup of salsa
Cheese, lettuce and spinach for filling taco, depends how much you like of each. 
Tacos (6ish) 

First I fry the veggie ground round for about 5 minutes with some onion and seasoning to add flavour. At the same time preheat the oven to 350 for the taco shells to go into. 

Chop all the veggies and place the taco shells in the oven for about 8 minutes. 

That’s it! Just fill up the taco however you like it, and don’t forget the salsa my favourite part! 

So quick, and easy! 

Stirfry

I know I do a lot of these, but when I’m all out of food this is what I make haha, cause I always seem to have tofu lying around and some form of vegetable. 

Ingredients:

1/2 block of tofu, cut into chunks
3/4 cup of chopped peppers, any variety
1 cup of fresh spinach
1/4 cup of chopped green onion
1 tbs of vegetable oil
spices

Put tofu into oil and brown slightly, add vegetables and spices and cook until tofu is golden brown.

Makes around 2 servings, not a heavy meal more of a lunch.

Spaghettini and Tofu

Ingredients
Serving size = 2 

1/2 red pepper
1/2 orange pepper
1/2 pkg. of firm tofu, cubed
1/4 red onion
1/2 cup of tomato sauce
170 g of whole wheat or smart pasta I used spagettinni
1tbs of olive oil
1tsp of garlic chopped 

Bring water to a boil, enough to fit the pasta. 
Add in pasta and cook to manufacturers instructions. 

Heat oil in a skillet and add the tofu until lightly browned, add in garlic. 
Chop onion and peppers and add into tofu mixture, and cook for a few minutes. I like to add in my onions a little early for better flavour. Season with pepper.

Remove pasta and drain and add 1/4 of sauce to each serving. 

Put tofu and veggie mix on the side. 

Final Product

Egg White Scrambler

Exam time = lack of posts, my apologies. Also I’m attempting to be healthier, so we will see how that goes.. 

Egg White Scrambler

Ingredients:

1/2 cup of Egg Whites, liquid
1/4 cup of Tomatoes
1/4 cup of Red Pepper
1/8 cup of Onion
5 spinach leaves
1 tsp of a pepper medley
A few pieces of cheese, I use only about 10g

Pour the egg white into a non-stick pan on medium heat, wait until the liquid turns white. Add in all the ingredients. 

Scramble together, until egg white is golden brown. 

Final Product


Homemade Spinach, Tomato and Cheese Pizza

Serving size = 2
Dough Recipe

Ingredients:
2 cups of flour
1tsp of salt
2 tsp of dried active yeast
1 tbs of olive oil

Add the flour, salt and yeast into a bowl. Create a well in the centre and add in the oil and 2/3 cup of water. Mix together to make a soft dough. Take out of bowl and knead on a lightly floured surface for about 5 minutes. Put back in bowl and cover with dish cloth for 5 minutes, then again knead out of bowl for another 5 minutes Place in lightly greased bowl and cover with plastic wrap for about 45 minutes, or until about doubled in size. 

Flatten dough with a rolling pin and place on a lightly greased pan.

Pizza

Preheat oven to 425 degrees. 

Ingredients:
Already prepared dough
1/2 cup of tomatoes diced fresh
1 tbs of olive oil
About 10 spinach leaves, chopped
3 basil leaves, chopped
1/2 cup of cheese, including marble and feta
Seasoning - I use a pizza seasoning, but any spices work. 

Brush top of pizza with oil, and place the toppings on top. 

Season with the basil and spices. 


Place in the top of the oven for 10 - 12 minutes, until it’s nice and golden. 

Final Product

Enjoy.
