Tofu and Couscous Stuffed Bell Peppers
Makes 2 servings as a meal, 4 servings as a side dish.
2 tbs of oil
1/2 pkg. of firm tofu, cut into cubes
1/2 tsp of garlic
2 bell peppers, seeded and cut in half
1/2 cup of mixed onions
1 stock of celery
1 Jalepeno pepper
1 Tomato
1/4 cup of diced eggplant
1 tbs Fresh basil
1/2 cup of couscous unprepared
A few tbs of feta cheese crumbled
Preheat oven to 375
Brown tofu in oil in a skillet with a 1/2 tsp of garlic, put onion mix in with tofu once it is about halfway cooked.
While this is cooking prepare the peppers by seeding them and cutting in half, place in casserole dish.

Dice the celery, eggplant, tomato and jalepeno peppers that were seeded.
Prepare couscous by adding equal amount of boiling water and allowing it to sit for 5 minutes. Add in veggies into the tofu mixture cook for a few minutes.

Add in couscous into pan and mix in soy sauce.

Place into peppers and put fresh basil and feta cheese on top. Put 1/2 cup of water in bottom of casserole dish and cover with foil
Final Product

I find this dish to be somewhat dry when it comes out of the oven, it pairs nice with some fresh salsa, or your favourite sauce.
