Serves 2 as a main course
1/2 of a green pepper
1/2 of an orange pepper
1/2 pkg. of tofu
1/2 of a zucchini
1/2 of a tomato
1/4 medium yellow onion
1cup of bean sprouts
2 tbs of oil
1/2 tsp of garlic
1pkg of club house oriental sauce ( I had it so I used it, but it’s not necessary, this is the first time I’ve ever used it, usually some soy sauce or honey garlic works well too…but it was good.)
Cook the tofu in 1 tbs of oil and 1/2 tsp of garlic until golden brown.
Add in all other ingredients except the sauce mix.
Cook for a few minutes, add the sauce mix, 1 tbs of oil and 1/2 cup of water and stir-fry for 1-2 minutes until sauce is thick. Season with salt and pepper.
You can serve on a bed of noodles, but I chose not to tonight.
