Ingredients:&lt;br/&gt;
1 small rutabaga&lt;br/&gt;
1 small onion&lt;br/&gt;
3 carrots &lt;br/&gt;
2 large potatoes&lt;br/&gt;
1 cup of vegetable broth&lt;br/&gt;
1 cup of water&lt;br/&gt;
Paprika, pepper, salt, bay leaf &lt;/p&gt;

&lt;p&gt;Chop all the veggies and then just put everything except the potatoes in the oven for at least an hour at 375 degrees. If you find is drying up just put more water or broth. &lt;p&gt;Makes 6 tacos, hard or soft (7inch ish) &lt;/p&gt;
&lt;p&gt;Ingredients:&lt;/p&gt;
&lt;p&gt;1/2 pack of Yves Veggie Ground Roung&lt;br/&gt;1/4 cup of chopped onion&lt;br/&gt;3/4 cup of chopped peppers&lt;br/&gt;1/3 cup of salsa&lt;br/&gt;Cheese, lettuce and spinach for filling taco, depends how much you like of each. &lt;br/&gt;Tacos (6ish) &lt;/p&gt;
&lt;p&gt;First I fry the veggie ground round for about 5 minutes with some onion and seasoning to add flavour. At the same time preheat the oven to 350 for the taco shells to go into. &lt;/p&gt;
&lt;p&gt;Chop all the veggies and place the taco shells in the oven for about 8 minutes. &lt;/p&gt;
&lt;p&gt;That’s it! Just fill up the taco however you like it, and don’t forget the salsa my favourite part! &lt;/p&gt;

&lt;p&gt;Ingredients:&lt;/p&gt;
&lt;p&gt;1/2 block of tofu, cut into chunks&lt;br/&gt;3/4 cup of chopped peppers, any variety&lt;br/&gt;1 cup of fresh spinach&lt;br/&gt;1/4 cup of chopped green onion&lt;br/&gt;1 tbs of vegetable oil&lt;br/&gt;spices&lt;/p&gt;

&lt;p&gt;Put tofu into oil and brown slightly, add vegetables and spices and cook until tofu is golden brown.&lt;/p&gt;

&lt;p&gt;1/2 red pepper&lt;br/&gt;1/2 orange pepper&lt;br/&gt;1/2 pkg. of firm tofu, cubed&lt;br/&gt;1/4 red onion&lt;br/&gt;1/2 cup of tomato sauce&lt;br/&gt;170&amp;#160;g of whole wheat or smart pasta I used spagettinni&lt;br/&gt;1tbs of olive oil&lt;br/&gt;1tsp of garlic chopped &lt;/p&gt;
&lt;p&gt;Bring water to a boil, enough to fit the pasta. &lt;br/&gt;Add in pasta and cook to manufacturers instructions. &lt;/p&gt;
&lt;p&gt;Heat oil in a skillet and add the tofu until lightly browned, add in garlic. &lt;br/&gt;Chop onion and peppers and add into tofu mixture, and cook for a few minutes. I like to add in my onions a little early for better flavour. Season with pepper.&lt;/p&gt;

&lt;p&gt;Remove pasta and drain and add 1/4 of sauce to each serving. &lt;/p&gt;

&lt;p&gt;1/2 cup of Egg Whites, liquid&lt;br/&gt;1/4 cup of Tomatoes&lt;br/&gt;1/4 cup of Red Pepper&lt;br/&gt;1/8 cup of Onion&lt;br/&gt;5 spinach leaves&lt;br/&gt;1 tsp of a pepper medley&lt;br/&gt;A few pieces of cheese, I use only about 10g&lt;/p&gt;

&lt;p&gt;Pour the egg white into a non-stick pan on medium heat, wait until the liquid turns white. Add in all the ingredients. &lt;/p&gt;

&lt;p&gt;Ingredients:&lt;br/&gt;2 cups of flour&lt;br/&gt;1tsp of salt&lt;br/&gt;2 tsp of dried active yeast&lt;br/&gt;1 tbs of olive oil&lt;/p&gt;
&lt;p&gt;Add the flour, salt and yeast into a bowl. Create a well in the centre and add in the oil and 2/3 cup of water. Mix together to make a soft dough. Take out of bowl and knead on a lightly floured surface for about 5 minutes. Put back in bowl and cover with dish cloth for 5 minutes, then again knead out of bowl for another 5 minutes Place in lightly greased bowl and cover with plastic wrap for about 45 minutes, or until about doubled in size. &lt;/p&gt;
&lt;p&gt;Flatten dough with a rolling pin and place on a lightly greased pan.&lt;/p&gt;

&lt;p&gt;&lt;strong&gt;Pizza&lt;/strong&gt;&lt;/p&gt;
&lt;p&gt;Preheat oven to 425 degrees. &lt;/p&gt;
&lt;p&gt;Ingredients:&lt;br/&gt;Already prepared dough&lt;br/&gt;1/2 cup of tomatoes diced fresh&lt;br/&gt;1 tbs of olive oil&lt;br/&gt;About 10 spinach leaves, chopped&lt;br/&gt;3 basil leaves, chopped&lt;br/&gt;1/2 cup of cheese, including marble and feta&lt;br/&gt;Seasoning - I use a pizza seasoning, but any spices work. &lt;/p&gt;
&lt;p&gt;Brush top of pizza with oil, and place the toppings on top. &lt;/p&gt;
&lt;p&gt;Season with the basil and spices. &lt;/p&gt;

&lt;p&gt;Place in the top of the oven for 10 - 12 minutes, until it&amp;#8217;s nice and golden. &lt;/p&gt;

&lt;p&gt;1/2 of a green pepper&lt;br/&gt;1/2 of an orange pepper&lt;br/&gt;1/2 pkg. of tofu&lt;br/&gt;1/2 of a zucchini&lt;br/&gt;1/2 of a tomato&lt;br/&gt;1/4 medium yellow onion&lt;br/&gt;1cup of bean sprouts&lt;br/&gt;2 tbs of oil&lt;br/&gt;salt&lt;br/&gt;pepper&lt;br/&gt;1/2 tsp of garlic&lt;br/&gt;1pkg of club house oriental sauce ( I had it so I used it, but it&amp;#8217;s not necessary, this is the first time I&amp;#8217;ve ever used it, usually some soy sauce or honey garlic works well too…but it was good.) &lt;/p&gt;
&lt;p&gt;Cook the tofu in 1 tbs of oil and 1/2 tsp of garlic until golden brown. &lt;/p&gt;
&lt;p&gt;Add in all other ingredients except the sauce mix. &lt;/p&gt;

&lt;p&gt;Cook for a few minutes, add the sauce mix, 1 tbs of oil and 1/2 cup of water and stir-fry for 1-2 minutes until sauce is thick. Season with salt and pepper. &lt;/p&gt;
&lt;p&gt;You can serve on a bed of noodles, but I chose not to tonight. &lt;/p&gt;

&lt;p&gt;2 tbs of oil&lt;br/&gt;1/2 pkg. of firm tofu, cut into cubes&lt;br/&gt;1/2 tsp of garlic&lt;br/&gt;2 bell peppers, seeded and cut in half&lt;br/&gt;1/2 cup of mixed onions&lt;br/&gt;1 stock of celery&lt;br/&gt;1 Jalepeno pepper&lt;br/&gt;1 Tomato&lt;br/&gt;1/4 cup of diced eggplant&lt;br/&gt;1 tbs Fresh basil&lt;br/&gt;1/2 cup of couscous unprepared&lt;br/&gt;A few tbs of feta cheese crumbled&lt;/p&gt;
&lt;p&gt;Preheat oven to 375&lt;br/&gt;Brown tofu in oil in a skillet with a 1/2 tsp of garlic, put onion mix in with tofu once it is about halfway cooked. &lt;br/&gt;While this is cooking prepare the peppers by seeding them and cutting in half, place in casserole dish.&lt;/p&gt;
&lt;p&gt;&lt;span&gt;&lt;img src="http://media.tumblr.com/tumblr_lj6wbiIGMo1qgmqi4.jpg"/&gt;&lt;/span&gt;&lt;br/&gt;&lt;span&gt; &lt;/span&gt;&lt;/p&gt;
&lt;p&gt;Dice the celery, eggplant, tomato and jalepeno peppers that were seeded. &lt;/p&gt;
&lt;p&gt;Prepare couscous by adding equal amount of boiling water and allowing it to sit for 5 minutes. Add in veggies into the tofu mixture cook for a few minutes. &lt;/p&gt;
&lt;p&gt;&lt;br/&gt;&lt;img src="http://media.tumblr.com/tumblr_lj6wdp7dtB1qgmqi4.jpg"/&gt;&lt;/p&gt;
&lt;p&gt;Add in couscous into pan and mix in soy sauce. &lt;/p&gt;

&lt;p&gt;Place into peppers and put fresh basil and feta cheese on top. Put 1/2 cup of water in bottom of casserole dish and cover with foil&lt;/p&gt;

&lt;p&gt;1/2 cup of cheese&lt;br/&gt;1/4 cup of tomato sauce&lt;br/&gt;1/3 cup of your favourite veggie toppings, in this case green peppers and green onion&lt;br/&gt;10 pieces of veggie pepperoni&lt;br/&gt;10 Wonton Wrappers&lt;br/&gt;2 tbs of olive oil&lt;/p&gt;

&lt;p&gt;Preheat oven 375 degrees F. &lt;/p&gt;

&lt;p&gt;Put small amount of sauce, cheese and toppings into the centre of each wonton wrapper. &lt;/p&gt;

&lt;p&gt;Water the edges of the wonton lightly and fold over into a triangle pressing down the edges until firmly closed. &lt;/p&gt;

&lt;p&gt;Glaze with the olive oil, place in oven. &lt;/p&gt;

&lt;p&gt;Turn over after about 7 minutes when golden brown, turn and put back in for another 7 minutes. Broil for last few minutes on both sides. &lt;/p&gt;

&lt;p&gt;Ingredients &lt;/p&gt;
&lt;p&gt;Diced pieces of tofu, about 50g&lt;br/&gt;1/2 cup of diced veggies including tomatoes, peppers, green onions&lt;br/&gt;1/4 cup of egg whites, I use natureegg simply egg whites&lt;br/&gt;2 tbs of olive oil&lt;br/&gt;1&amp;#160;7inch tortilla, I use Dempsters Ancient Grains&lt;br/&gt;1/8 cup of shredded cheese&lt;br/&gt;1 tsp of a pepper medley&lt;/p&gt;
&lt;p&gt;Put oil into frying pan, add in tofu, cook until golden brown on most sides. &lt;br/&gt;Add in veggies and simmer for about one minute, add in egg white and pepper medley. Scramble all together until egg white is cooked thoroughly. &lt;/p&gt;

&lt;p&gt;Put mixture into tortilla and place cheese on top.&lt;/p&gt;

&lt;p&gt;1&amp;#160;12 oz can of corn, or use equal of frozen corn&lt;br/&gt;1 can of campbells cream of celery &lt;br/&gt;1 pkg. of yves veggie ground round, thawed to room temperature&lt;br/&gt;4 medium sized potatoes, red or yellow&lt;br/&gt;salt&lt;br/&gt;pepper&lt;br/&gt;1 tbs garlic&lt;br/&gt;1/3 cup of skim milk (for the ground round)&lt;br/&gt;1/2 cup of skim milk (for the potatoes)&lt;br/&gt;1/3  cup of sour cream&lt;/p&gt;

&lt;p&gt;I don&amp;#8217;t peel my potatoes because I love the skin, but if you prefer otherwise then feel free to do so. Cut potatoes into chunks and bring water to a boil.&lt;br/&gt;Add in potatoes for approx. 15 minutes, or until tender. &lt;br/&gt;I add garlic into the water to give them a little flavour at this point.&lt;br/&gt;You can also steam them, I do that sometimes too, but I didn&amp;#8217;t wanna get out all those dishes today. &lt;/p&gt;

&lt;p&gt;Preheat oven to 375 degrees&lt;/p&gt;


&lt;p&gt;In a separate bowl add in yves veggie ground round that is room temperature and the cream of celery mix together with the 1/2 cup of milk. Now mix in the whole can of corn. Add this mix into a casserole dish. &lt;/p&gt;

&lt;p&gt;After potatoes are done, drain the water and mash in a bowl with the sour cream and milk until fluffy. &lt;/p&gt;

&lt;p&gt;At this point, layer the potatoes on top of the ground round, season with salt and pepper and place in oven for about 30 mintutes. &lt;/p&gt;

&lt;p&gt;Broil for the last few minutes of cooking to give the potatoes a nice crisp look and feel. &lt;/p&gt;

&lt;p&gt;Makes 6 cupcakes&lt;/p&gt;
&lt;p&gt;Ingredients&lt;/p&gt;
&lt;p&gt;1/2 eggplant&lt;br/&gt;small zucchini&lt;br/&gt;1/2 yellow onion&lt;br/&gt;1 tsp of dried parsley or basil&lt;br/&gt;salt &lt;br/&gt;pepper&lt;br/&gt;approx. 8 slices of red pepper, more if preferred&lt;br/&gt;tbs of chopped garlic&lt;/p&gt;
&lt;p&gt;1 can of stewed tomatoes&lt;br/&gt;1 cup of tomato sauce&lt;br/&gt;1 green onion&lt;br/&gt;1 tbs red pepper flakes&lt;/p&gt;
&lt;p&gt;18 wonton wrappers&lt;br/&gt;1cup of a hard cheese, such as cheddar or mozzarella&lt;br/&gt;1/2 cup of ricotta or feta cheese&lt;/p&gt;
&lt;p&gt;Preheat to 450&lt;/p&gt;
&lt;p&gt;Slice onion, zucchini, red pepper and peeled eggplant &lt;/p&gt;
&lt;p&gt;Put all in roasting pan with a drizzle of oil, chopped garlic and fresh or dried basil and parsley and salt and pepper to taste&lt;/p&gt;
&lt;p&gt;Put in oven for 20 minutes, then mix and turn over vegetables and roast for another 20 minutes. &lt;img src="http://media.tumblr.com/tumblr_liw7suniXp1qgmqi4.jpg"/&gt;&lt;/p&gt;
&lt;p&gt;&lt;br/&gt;&lt;span&gt; &lt;/span&gt;&lt;/p&gt;
&lt;p&gt;While this is in the oven I like to prepare my own tomato sauce for the cupcakes&lt;/p&gt;
&lt;p&gt;Drain excess water out of can of stewed tomatoes, and mix together in a pot stirring occasionally and simmer for about 10 minutes, until mixed thoroughly. &lt;/p&gt;
&lt;p&gt;If you like a little heat add some red pepper flakes, also some green onions for flavour. &lt;/p&gt;
&lt;p&gt;Also if you find the sauce a little too watery at the end which sometimes happens  with stewed tomatoes then just drain the excess water at the end. &lt;/p&gt;
&lt;p&gt;This will probably make too much, so just put the extra in a tuber ware and keep for pasta later. &lt;/p&gt;

&lt;p&gt;At this point the vegetables still have to be in the oven for another 20 minutes or so, which gives me a good amount of time to make the homemade bruschetta, which will be in the recipe below. &lt;/p&gt;
&lt;p&gt;Lower temperature of oven to 350 degrees.&lt;/p&gt;
&lt;p&gt;Take 3 wonton wrappers and layer them not directly on top of each other and place in muffin pan.&lt;/p&gt;

&lt;p&gt;Do this 6 times for each, add in sauce and vegetables and layer with cheese.&lt;/p&gt;

&lt;p&gt;Put in oven &lt;/p&gt;
&lt;p&gt;Bake for about 20 minutes, and then let it rest for about 5-10 minutes, add fresh herbs if desired. &lt;/p&gt;
&lt;p&gt;FINAL PRODUCT &lt;/p&gt;

&lt;p&gt;&lt;br/&gt;&lt;br/&gt;Homemade Bruschetta&lt;/p&gt;
&lt;p&gt;Serving size = 2&lt;/p&gt;
&lt;p&gt;Ingredients&lt;/p&gt;
&lt;p&gt;1cup of diced tomatoes&lt;br/&gt;1 green onion&lt;br/&gt;1/4 cup of red onion&lt;br/&gt;1 tsp of dried basil&lt;br/&gt;1/2  tsp of white vinegar&lt;br/&gt;1tbs of olive oil&lt;/p&gt;
&lt;p&gt;1 fresh about 5 inch diameter bun&lt;br/&gt;1/2 cup of grated cheese or crumbled, any variety&lt;/p&gt;
&lt;p&gt;Mix first set of ingredients in a bowl and cover with a wrap and put back in fridge to cool.&lt;/p&gt;

&lt;p&gt;When just about ready to serve meal, add on top of bun and sprinkle cheese on top, put in oven on broil until cheese is melted or bun edges are golden brown. &lt;/p&gt;

&lt;p&gt;I&amp;#8217;m a 20 year old undergraduate student currently located at the University of Guelph. I&amp;#8217;ve been a vegetarian for about 8 years now, and have loved every second of it. I have recently found a new love of trying new recipes, so I have decided to document this adventure. As well I will be putting up some recipes that are classics to me. &lt;/p&gt;
&lt;p&gt;You will notice there is somewhat regularity to the types of foods I use, this is because:&lt;/p&gt;
&lt;p&gt;A. I like them &amp;amp;&lt;/p&gt;
&lt;p&gt;B. I&amp;#8217;m pretty cheap/poor so as a student I tend to buy the same things to make different meals out of them. &lt;/p&gt;
&lt;p&gt;I will be putting step by step directions along with pictures. Hopefully it&amp;#8217;s not too confusing, if there are any questions regarding the recipes then send away&amp;#8230;&lt;/p&gt;
